fagor thermostat

Hi I have a Fagor FDO900X double oven which is very temperamental! Sometimes the oven gets to the required temperature other times it doesn't despite the temperate gauge on the oven stating it has got to the set temperature! I replaced the fan element a few months back an everything worked...
