I've been given 600mm wide shower panels to install in a 800mm shower enclosure. This is a bad idea as there will be a joint on each wall to make up to 800mm it's the wooden panels. I have before used the plastic stuff that comes in 2.4m x 1m lengths

Usually an H strip would be used to join them together. Are you talking about the ply/MDF backed panels? Not cheap.
They should have their own type of jointing strip specific to that make of panel.
