I’m replacing a thin and poorly insulated ceiling and dry lining some new walls in my garage/utility. The current ceiling doesn’t look to be fireboard or even doubled up.

Am I ok to board the walls with 9.5mm and then double board the ceiling? This will keep wastage at an absolute minimum.

Or should I go for the 12.5 fireboard on the ceiling and then 9.5 (or even 12.5) on the new walls?

Ceiling joists are 450mm centres. Walls I was going to do 600mm.

I double boarded garage ceiling with 12.5mm to comply with regs.
I could of used one 12.5mm fire board instead.
As for walls 9.5 is a bit bendy. 12.5 is much nicer and more sturdy.

Yeah.
2 x 12.5 or 1 x 12.5 fire board
Incandescent mastic around the edge.

I'm not aware of any changes in regs so check.

I hired a board lifter for £50 for the week to make it easier

Specs say it’s an extra 5kg per board, I bet it tells. I got given a pair of telescopic props, so feel I should struggle with them rather than hiring a lifter.

Ok.
Look up board mate. You can make similar with to bits of scrap wood. Just locks in the one end then use your props to hold.
Sounds like you have it all worked out.
I did same with two props for years. Just got too heavy in the end as I got older.
I also tied props as they tend to fall as you fix board and can get damaged
