I don't think it matters, but is there a recommended height for free standing appliances below worktops. i.e. should there be a small gap between the tops of the appliances and the underside of the worktop or should they be just touching. The reason I ask is that I am sure I have read somewhere recently that you should set them to just touch!

There is height for free standing appliances( and if manufactures dont stick to it they wont be selling appliances). There are standard height cabinets.
The unit under the worktop should be free to remove if touching it will be difficult.
Yes a large gap will not look very nice.
I no I havnt answer your question, but I think you need to think about the situation.
 
I think you are saying "do what is best for you" which I will. I can remove the units by grabbing the sides so I will probably leave about 5mm - 10mm clearance above. This is to allow some washing machine movement should it get a badly unbalanced load. Just wondered if there was an accepted gap.

10mm is plenty also if you are putting fridge or freezer, you need airflow. Even the washing machine will need air circulation.
