how far back should the architrave sit from the edge of the door frame when fitting? is 10mm too much?

5 - 10mm is fine, if its your house its your personal preference, but 5 - 10mm is a good guide.

Or if you're as rough as I am you could allow a couple of inches then you have a lot of tinkering room if you make a big mistake!
