Base for bathroom tiles?? Plasterboard or sand and cement??

My bathroom is currently floor to ceiling tiles, I have started ripping out the old tiles and am not sure what to do next. Part of my bathroom is sand and cement under the tiles, this has come off when ive removed the tiles exposing the brickwork, am I able to dot and dab and put waterproof plasterboard on in preperation for the new tiles?
or is there a better/easier way to sort this?
also? is plasterboard stong enough to hold a sink and toilet bearing in mind usage and weight etc...

In terms of getting the walls flat, there is no better method than dot and dabbing.

The problem you do have is that Plasterboard just isn't waterproof at all, even the Moisture resistant stuff; so if you're tiling in a wet area, in particular when a power shower is involved, the wall will need tanking
 
I was looking into using aquapanel around the shower area, im not sure what tanking is though, any help with this?

Tanking is a rubberised waterproof coating that you paint on.
