Best Backing plaster

About to plaster the kitchen. Have taken the tiles of all the walls and as usual the existing plaster has broken off exposing the brick in many places. Think I will chip it all off and start over, unless advised otherise

Whats the best backing plaster to use Browning, Hard wall etc.
don't want it going off to quickely before its flat, Im just an amateur?

browning is, in my opinion the easiest to use.

you can prolong the working time of the plaster by applying a scratch coat first then a top coat a little later.

the scratch coat will deal with the initial suction of the wall freeing up more time for ruling off and floating on the face coat. don't leave it too long between coats. same day applications are quite normal.
