Best way to proceed

Hi all,

I'm dropping the ceiling in our front room and whilst doing so some of the plaster has broken away and I'm wondering what the best way to proceed is?

Above the window is the worst area, the grey stuff under the finished plaster is quite loose in places and it's about an inch deep back to block, am I best just knocking all the loose stuff off and a plasterer will be able to make good or am I best knocking it all off to bare block?
