Best way to repair door frames

I have these monstrosities on the door frames of internal doors of my house. I want to replace them with standard handles with latches.

Any tips on repairing the big cutouts in the frame, other than wood filler.

Noooooo. Take 'em off, clean 'em up, put 'em back. Sorted!

Too much embuggerment to do otherwise.

You could get the doors dipped and stripped too.
 
If you're lucky the frame might be built up of individual pieces of timber, you can build up harwood replacements to match the existing (I used Meranti on mine). Otherwise you might need to rout some or all of the "shape".

Use 2 part epoxy filler, like repair care or timberfix, to bed and join the new mouldings to the existing.

If you're buying all the above from scratch it may be more economic to use a carpenter.
