Boxing in pipes on ceiling

Not sure if I have the right forum but here goes. I have some pipes I need to box in on a kitchen ceiling and just needed some tips on the simplest way to do it. The area is approx 6'x 3' and he drop is about 8 inches.

They are water pipes? as opposed to flue pipes?
