Capping water pip

My daughter is having a kitchen fitted by Magnet. She has paid for installation.
Day before they have told her that old kitchen has to be removed- first mention of this to her. So demolition OK But the sink has to come out It is copper supply pipe to a flexi pipes which connects to the taps. Looking at a photo she sent me I cant see a shut of valve on the pipes. So after disconnecting the Flexis will need to cap the copper pipe temporarily for new sink to go in. Is there a fitting available? I cant solder and anyway don't want to seal it permanently.
Have to say, since they had the deposit Magnet have been useless and rude. ( I know fitters are contractors so not knocking them.)
