I am lifting the floorboards in the loft this weekend and although not fitting a camera yet this will be a oppertunity to run the cable or cables now.....I am not sure what camera or system to buy yet( I will ask a later date) but I would like to run a cable that will cover any upgrades/changes later on

That's the more traditional route. Does a job but does have it's limitations, although you're unlikely to come across them in your situation.

With cat5 you get more options. From your explanation you don't yet know what you want to fit - basic analogue, IP, IP with PoEetc. Wacking a cat5 in will cover all your bases.
In case you're wondering, traditional analogue works very well over cat5, you just need a pair of baluns, one at each end.
