Ceiling has 3 sets of wire

Hi I have just removed a light fitting, which has revealed 3 main cables, all cables have a black, red and earth wire. This is in my kitchen which has a extractor fan (which has never worked) one of the cables had the red wire wired to the light but the black and earth had been cut short and tucked away so not wired with the two other full cables. Do I just wire all the live, neutral and earth wires together in the terminals? Any help is appreciated. I’ve attached pictures of the wires and new light fitting. Thanks

You make a note or take a photo of original wiring before disconnecting anything .

I normally do take a picture before taking it apart, but the previous owner made it impossible to remove normally so I had to lever it off.
 
You will need some testing instruments to determine what each wire is.
Also take a pic to show us of the wiring at the switch that controls the light.

Ok thank you. The light switch is just wired as a normal light switch with one neutral and one live wire
 
A " normal" light switch does not have a neutral connected to it. It could have a black wire connected ,but it would be used as a live and should have a piece of red sleeving on it to indicate so .

Thanks ,one of the twin and earth cables at the ceiling is the switch cable. Do you have a multimeter to do some testing with ?

No I don’t, but I can get one tomorrow, I’ve changed all the light fittings, switches and plug sockets and the kitchen light fixture was an old spot light bar that kept tripping so hence changing it, but the wiring has baffled me. Thanks for your help
 
Pick up a strip of connector blocks ,if you don't have any, so each of the wires can be put in individual terminal blocks for ease of testing.
 
You could put the 2 reds together and one black in L and one in N, that just leaves the random red to sort.

Yeah I’ve got some blocks, I’ll test the cables individually tomorrow thank you for your help

Thank you I’ll try that, it’s the random red one that’s confused me, the extractor fan has never worked since I moved in, I’m wondering whether that could be its wire?
