Ceiling not straight

Our kitchen ceiling rises slightly above the cabinets and bugs the hell out of me. I'm guessing the joists/boarding were slightly our when it was skimmed. In certain light you can see the line of the dip running about half a metre from the cabinet.

If you were to attempt a fix on this how would you go about it?

It looks like a false ceiling.

Treat the gap with white caulk.
