Ceramic wall tiling - preparation where plaster and render has come away

I am refitting my kitchen in an old property and when I removed the tiles, in one area the plaster and/or rendering has come away, covering an area about 2 feet square, leaving about a depth of 2 or 3 inches exposing brick.

What is the best and simplest ways for a DIY repair job before recovering with ceramic tiles, please? I don't really want to employ a plasterer.

Would it be ok to use some sand and cement that I already have to fill the recessed area? I am reasonably confident I can get this smooth and level enough using sand and cement but not sue if that would be a good base for ceramic tiles?

Thanks. How long do you suggest I leave the sand and cement to dry once applied, before tiling.....a few days?
