Using concrete blocks to edge some soil but 2 full blocks would be to high. I'm using 440x215x100mm. Can i cut length ways & mortar them on top to finish it off? Would it be ok & look ok like that?

If you're OK with the finish, you could use the cut-offs, filled with mortar to make them level and flush finish with the others.
The overall height of the wall will be only 300mm. No big deal.

I could cut lengthways but seeing if it's ok putting roughly half a block on top to finish due to not done it before.

How are you planning on cutting them?
The only sensible way I can see is with a grinder. But a 115/125mm grinder won't achieve a 55/60mm deep cut, more like a 40-45mm cut, due to the configuration of the machine, but that should be sufficient to achieve a relative clean cut, with a light tap.
A 230mm grinder would be better.
You'll need the correct disc.
It'll be very dusty.

I've got 125mm grinder & also 230mm grinder with diamond disc cutters so that should do the trick? Not looking forward to all the dust but it's got to be done. As long as roughly half a block on top is fine then i'll go ahead & do it because i think i'm all tooled up for it.
