how do you work out wot amp consumer unit you need ive seen 100 amp how do you work out which one you will need for the circuits you have

You don't. You just get a main CU for a house with a switch rated 100A because that is the normal maximum rating for a house supply.

I would venture to suggest that if you have to ask a question like that you are probably not at the stage where you should be doing installation design....
