The cable for the electric cooker comes up from the floor, how do I terminate this into a cooker outlet plate, are they a bottom entry?

What?

Don't understand you.

The cable from the cooker switch can enter the back box for the cooker outlet from any direction.

The cable from the cooker outlet to the cooker will emerge from the cable entry traditionally situated at the bottom of the cooker outlet plate.

So can both cables use the bottom entry option?
Thanks for your reply.

No. The supply cable from the control switch enters a given point in the back box.

Only the cable going to the cooker uses the bottom entry in the cooker outlet plate.

(If you were trying to supply TWO cookers, you would use a dual cooker outlet, in which the supply cable from the control switch would enter through the back box, and both cable cables for both cookers would go through the two cable entries at the bottom of the dual cooker outlet.)
