I am about to replace my elderly 600mm “slot-in” electric cooker, but I have seen mention somewhere that any top cupboards should be 50mm back from each side. My top cupboards match the bottom units - with the same 600mm gap. Is the 50mm a new thing, and does this mean I can only put in a 500mm cooker with nasty gaps alongside?

Unless the Cooker Police operate near you I wouldn't worry about it. It is new to me if it right but I would ignore it and do as you like. Millions of cookers all over the UK are just like yours in relation to the wall units ( mine too ) and now we are told it is wrong ? What next I wonder.
 
An air gap will be required, just check instructions with the cooker.
You can always put a thin sheet of insulation between the cooker & cabinet.

Also
THe fitting instructions will be based on oven on if 2 ovens both on & 50% of hob on.
So if thats not you I wouldnt worry, except if you do have a kitchen fire the insurance company could refuse payout.
