Is a crack in an old joist a concern? I would like to build a stud wall below this end joist to leave a void behind for soundproofing/services.

i wouldnt stress over it , as long as it’s sound, no rot.
Its a shake not a crack. There are currently 3/4 of a million of them in the UK, doing ok just like yours.
