Cracks in plaster - skimming advice.

I want to get a plasterer to plaster the kitchen.
One of the walls has multiple hairlike cracks in plaster but it is fairly solid.

If we just skim over I bet the cracks will come back. What shall I do. Remove all the plaster down to the brick and leave the corners or is there a way perhaps to use rendering mesh and just skim over to save some time.

The second photo shows the rest of the room that they removed the tiles and the wall came off!
