I want to do away with a double socket in my loft conversion and the cable is behind the studwall in the loft area, can I just crimps them together and choc-block the earth wire then tape it up, or use a junction box instead?

If you have a crimper then thats the way to go, earth included. Tape is not good. Over time it falls off. You can use heat shrink over the joint or enclose the joint in a back box with a blanking plate cover. You could use a JB but only if you can get at it later for inspection which in your case sound unlikely

The red crimps will do 0.5 - 1.5mm so they will be fine for the earth. If you're buying the crimps for this job just buy blue butts and double the earth wire over. It will then fill the blue crimp and save you having to buy both sizes.
Is it ok to use crimp connectors on solid wire, or can they only be used on stranded? I ask as I am reading conflicting information.
If you heat shrink each individual wire, do you then need to go one step further and protect the whole connection? (I'm wondering as the grey outer 'wrapper' is now gone.) If so, is more tape permissible? Or does it need something else?

The electrical crimps are designed for both solid & flexible cable.
If the cable you're jointing is double insulated, ie T&E then the joint must also be double insulated.
You don't normally put heat shrink over each core, you put it over the complete joint and exposed cores.
Some DIY installers do use insulating tape but as I said before in time it falls off. It also looks poop.
