Im looking to put a door in the side of my Garage, I will put a reinforced concrete lintel above the door.

I will clear a path down the side so it is at ground level but I am unsure the best way to deal with this outer wall the builders have put in?

I've found the plint left and right bricks so I can neaten the outer, wall how much space would leave between the edge of the door to the plinthed outer wall? or none at all?

Thanks

If the wall, including the plinth, had been built with a doorway in mind, then the brickwork at plinth level, will have had the bricks returned at the jambs. However, yours will look a mess, once you demolish the wall. Especially considering that the door frame will sit approximately 30mm back from the (above plinth) plane of the wall face.
You will likely have to tooth-out the halves and return the six or so courses at plinth level, for it to look correct.
We are building a (pain in the arris) plinth structure currently....
