demolition of old toilet block

Help! Just moved into a house with a toilet in a little room off the back of the house (originally an old outdoor dunny; new extension was built out to meet it)

We're now getting a new bathroom suite installed and a toilet put in there and so would like to remove this old toilet & pull down the block. Any advice?

Is it a simple case of disconnecting the cold water supply and removing the toilet pan & cistern, somehow blocking the drain (or shutting it off??? How would we do this???) and then we could pull down the brickwork?

Stick a ball of newspaper down the drain to stop debris getting down it. Bed a slate or tile over a socket on the pipe in sand and cement mortar. Dig down a bit if necessary.
You get the picture? The idea is to form an airtight seal over the drain to stop the smell getting out, but the key to it is the newspaper
