It will not work.

There are some dimmer pull switches which have a proper switched terminal for the fan, but this may require your wiring to be slightly reconfigured

Fine if it has an over-run timer otherwise it will likely slow down and speed up with your dimming.

I've always been wary of claims by dimmer manufacturers that their dimmers are ok with motors and that even goes with high quality sophisticated ones like we use at work.

If the output triac goes half wave as they sometimes do then damage could be caused to the motor windings.

also harmonics can shift into a large inductor and cause it's windings to resonate and make noise/hum.

Not saying it cant be done but cost is usually higher due to the necessary extra circuitry needed and reliability is an issue.

When sine wave dimmers are finally made to work properly and cheaply the current problems of driving inductive loads will hopefully disappear.

One final thought is that businesses that use a lot of phase angle dimmers will in the not too distant future be held responsible for the "noise" that they pump back into the grid and legislation may force them to adopt the new technology of sine wave dimmers this has been discussed on certain dimmer manufacturer's websites it may well be a ruse to make people think about buying into new technology but they have to be careful what they say so is likely to be true.
