I live in a house built in 1990, I pulled the plasterboard wall down, which looks like dot and dab on the wall there were various mortar looking substances around the modern gas fireplace. of various appearances. is their any Gas / Building contractor around could tell me if I should be concerned about if these contained asbestos.

Highly unlikely given the age of the property, but I wouldn't spread it on my corn flakes.

Unlikely. If there's asbestos it will be fibrous looking, you'll often see tiny hairs sticking out of the broken edges.

If you want to be really careful then spray it with water before you clear it up. Asbestos is only harmful if it's airborne.
