MDF isn't the greatest of materials for use in damp environments - if exposed to moisture for long periods it often loses some of its' strength. Joints like dowel joints can also fail if they are exposed to damp.

Which parts of the structure are bowing? A photo can often help someone on here advise you on what the best solution to your problem might be

I'd suggest addressing the damp issue. Why are you needing a dehumidifier?

Always sleep with window slightly ajar / trickle vents open. Never dry clothing on rads etc. Open windows fully every morning, throughout the whole house to have a blow through. Keeps the air clean, clear and fresh.

Wipe any condensation off windows, frames and cills etc as and when it appears. Stops mould from getting established.

If the MDF has bowed, it suggests that MDF has expanded, possibly because of the moisture.

Humidifier !!

Depending how the bed is designed then mdf is fine, my super king-size bed is all constructed from 18 MDF not bowed at all. A humidifier is not going to have any effect on sealed mdf so more likely it’s just badly constructed .
