Domestic hot water temperature too hot

As a new member I have found this site to be very good (-:
I recently fitted a new hot water cylinder in the airing cupboard. The old one did not have insulation bonded to it and had a pocket for the water temperature sensor. Obviously the new cylinder does not have this pocket. How can I modify my system to monitor the hot water? I have pushed the temp. sensor into the insulation but obviously this is not satisfactory and the water gets too hot at present. A strap on sensor would not work because of the bonded insulation.

Yes, I cut a hole in insulation so that the sensor is touching copper, but water still way too hot. How would you fit a sensor band to an insulated cylinder anyway, do you have to strip off the insulation right round the tank?
