Door stripping - to do or not to do?

Have just obtained 5 1930's pine panel doors painted white.

I am looking to repaint these with the type of paint you use for kitchen cabinets which is two parts mixed together (not sure of what it is called but is very tough, resistant to knocks and marks, and dries without loads of brushmarks). Not sure whether to just sand down, or to hand strip with a nitromors type substance, or send them away to have them dipped.

I plan to take the top square 18 x 18 wood ply panel out and replace with glass/leadlight panels.

Advice / thoughts gratfully accepted.

Chemical stripping is pretty ruthless really and can take out some of the sapwood in the door, leaving an open grain - it is very effective though!
If the existing paint isn't too thick I'd consider giving it a good sanding with an orbital sander, then fill any defects before applying a primer / surfacer.
