I have fans in the en-suite and main bathroom, both which I've discovered just vent into the attic.

If I were to connect both to a roof vent, would this T be suitable?
I'm concerned that the extracted air from one fan will be ducted across to the other as well as going through the roof vent.

I'd say separate duct runs to external, or at the very least NRV's to prevent the re circulation of exhausted air. Condensation could also be an issue, you dont want water going back into the other fan that isnt running.

So really, horizontally run duct pipes with air/condensation extracted through the gable end wall, each fan having its own pipe.

Yes, if thats the best way to run the ducting. Ideally on a constant slight fall to the exit, to allow any condensation to drain to outside.
