Exposed Brickwork: Cleaning, Sanding, Sealing

Hi all, this is my first post so hello everyone and thanks for looking in on this.
Can anyone help me with a bit of advice on my brickwork?

We have stripped back a lot of rubbish plaster and found some really nice old London redbrick.

It is a bit messy and needs a tidy up, sanding back, then sealing.

Can anyone give me some advice on processes/equipment/chemicals to use?

BACKGROUND: I am currently refiitting a shop for my mrs in Epsom. It was previously a doggy grooming and rehab parlour. Yeah I know. It had an endless swimming pool in there and obviously everything is damp.
I have had a dehumidifier going in there for days sucking it out.
