I have to cut and prepare 12mm exterior plywood to complete an external structure. One sheet is just a few mm too long. Will my power plane take this off safely or will it rip out the end grains. Any suggestions for easy and accurate cutting?
Once cut, will sealing with varinish prolong the life of the boards and prevent water/frost damage to the cut ends?

Seal the edge with shellac (French polish) or thinned out varnish and leave to dry, then if you clamp a block of scrap to the exit edge using a sash cramp or work in to the middle from both edges you'll minimise break-out. Also use fresh set of blades.

Yes. Plywood placed outside should still be protected that way. Remember to give the edges and extra coat or two more than the flat surfaces.
