Always used the solid plastic fascias in the past but decided to carcass out in timber on my garage and cap. 18mm ply best? Or 6x1 treated?

Nice one, cheers. As in the plastic eaves trays? Used them before, think it also doubled up as an over fascia vent

Whatever works, in terms of height.

The fascia carcass needs to be deep enough so that your soffit lines up with the masonry courses and the top needs to be tall enough to provide adequate kick for the first course of tiles.

Our latest job will need 8" x 1" PAR with OFV's. The OFV's equate to about 25mm.

When we say PAR we mean planed untreated, correct? As opposed to tanalised
 
It's always wise to use treated timber in this location. Risk of a bit of moisture leading to a lot of rot, but also the treatment protects against insects too.

And best not to use the bits of ply you have lying around. That's a pilsbury job. Use long pieces of timber to keep things aligned and in place.

False economy really. Ply is generally 2.4m max and rippings are not all that reliable in width. You will get better results from a longer piece of PAR and it will save a lot of faffing about.
 
Is there such a thing as PAR treated then? Only thin treated I’ve ever seen at my merchants is 6x1 rough sawn ie like gravel board

not treated no.
If 6 by is the depth you need then you are doing the right thing if buying treaded is your thing. We would set the timber level with the soffit, then add to the top via a treated batten, should we wish to increase the height.
 
Do you carcass the soffit in timber too? Or just run battens/trim to attach the upvc to
 
treated PAR comes in at a high price compared to rippings of ply - plus there's the poor quality of much PAR timber.
an 8 x 4 sheet of 3/4" ply can provide 8 lengths of 6" fascia - ply ripping widths, of course, can be controlled to add or subtract from whatever standard width is needed.
8ft of non-faffing ply fascia will pick up six or seven rafter tails.
pre-paint all round before fixing.

OP, never have dealings with handymen who talk about bits of ply that they might have lying around.
