Filling large gap around door frames

Hello,

I am planning to replace the old architraves around our doors. The old architraves were hiding large gaps between the door frame and plaster - since the new architraves are about 1" narrower they won't cover these up so the gaps will need to be filled in.

What's the best way to fill these in? The gaps are about 1.8cm deep at the wooden frame, with some much deeper areas where there's a gap between the frame and brickwork (photo attached).

I read somewhere that plaster doesn't stick well to wood and can crack as the wood expands/contracts, so not sure that slapping on plaster is the best approach.

I thought maybe plugging the gap with some plasterboard that's nailed onto the door frame, taping the edges, filling small gaps where necessary?

Any advice welcome!

Strips of plasterboard. Layer if you want more depth.
Prime dry board edges with PVA will help prevent future cracking.
