Think I'm just overthinking this but I can't get my head around how to fit my undermount sink.

It's a new kitchen so no worktop on yet. I am planning to cut into the top beam of the carcase to accept the sink and then fit a baton to support the lips around the sink. The sink will then rest on these batons and the worktop will sit on top of the lip of the sink.

Is this the best way to do it or am I missing something?

Depends on sink design and worktop material . My sink is just glued to underside of granite top .

A lot of under mount sinks come with brackets to attach to the underside of the work top. When fitting my kitchen I did not feel these were adequate and built support pretty much as you have described and has been perfect. The only problem I see if in future I ever need to replace the sink it will be very very difficult unless I removed the work top which is not an option.

As lamchamps, it's not unusual to make up a 2 x 1 softwood frame to help support the sink in addition to the clips. Sort of belt and braces
