Hi, what's the best way to fit oak torus architraves, it's an old house so no studs, just brickwork & plaster, I was thinking grip fill, drill and pinned, if so, what size and type of pins?

Use Soudal fixall, they will never move again.
I use a drilled pilot and a screw (wood glue as well) in the mitre cuts to get them tight, but not really essential.
