Fitting Velux when room plasterboarded.

I have 2 Velux windows to fit which I’ve done before when there is no plasterboard to underside of rafters

my question how do you double up rafters when it’s plasterboarded.
Do you strip plasterboard to access beyond the rafter to enable getting the rafters in? And then bolted

just looking for a simple tip as I don’t want to completely strip large sections of ceiling to then have to reboard and plaster

Make it easy for yourself and strip what's needed. Worst case scenario would be leaks and you'll have to remove more.

You are adding windows... expect some amount of reboarding and plastering.
