Stupid question perhaps.... When building a flat roof, you would build the joists level then add fillets known as firings to get the min1:80 fall?

Seeing as this is such a gentle slope, how do you cut these firings?

You dont need to cut them - you buy them in from any builders supplies or timber yard.

4x2, measure 10mm up from one end, 10mm down from the other, mark the [diagonal] line and cut along it

Sounds easier when said like that.

My slope is running across the joists so the tapered firrings you suggest would sit perpendicular across the joists. Is it feasible to get my local wood yard to simply plane down some 2" timber batons all a couple of mm's apart and fix these batons in their graded order to the tops of individual joists? That seems more secure in my eyes however the tops of these would be flat and not sloped.

No. Fit furrings perpendicular to the joists.

You won't get a an even fall with your idea, and it's no more secure.
