I think water has got underneath our floorboards and caused substantial warping. Will we have to replace them or can anything else be done?

How long has the water been underneath there and has it completely gone?
Depending on how long the floor has been in contact with the water the boards should shrink again (but you'll have to have patience).
If there are black marks on the wood, then you might have to sand them down or even remove them, cause these black marks can go very deep.

It feels dry to touch and there are no signs of water seeping out so i think it has already dried. i have put new sealant around the shower base so dont think it will happen again, but is water the only reason for it to warp?

It normally is. But water can come from various courses: leaks, condensation, spillage.
Keep regular checks on your floor to see if there are more reasons to worry than the leak you had.
