I'm getting a bit delusional digging here but could someone enlighten me to how deep I should be going for sub base and concrete base on top for foot traffic only? I'm currently about 150mm and I'm losing the life to live and it's such a small project haha.

that’s deep enough.
no sub base needed .or you could put a inch or two to save mixing so much concrete.
some might suggest lining the bottom with a dpm.

Any reason why no need for sub base? Most pages I Google seem to keep pushing for a sub base of at least 75mm for some reason but I'm assuming maybe that's got heavier loads on top?

the reason i suggested no sub is its just a footpath . 150mm is enough to drive a car on .
you could use 75mm of sub and mix half the concrete. in which case you could have just dug out 75mm and no sub and still be confident it would be fine for foot traffic.
