Halstead Eden CBX32 hot water issue

I moved into my house in 2007 and boiler was already installed and it is serviced every year. I have a Halstead Eden CBX32 boiler that is often at 0.5 bar or even less. If it is left at that low setting it will periodically switch off with a red light and the error lights point to differential check faulty with a reason of Zero check faulty DHW or CH and the action is to check flow \ return sensor or check wires to sensor are not crossed or check PCB. My solution is to turn off the boiler and top up the water pressure to 0.5 or 0.75 bar. If I set the water pressure any higher then when the CH comes on the bar rating goes to between 2.7 - 3 bar. If the CH is not turned on (e.g. summer) then I set the pressure to 1 bar as this gives us a better hot water supply. But if I set the system pressure to 1 bar then when CH switches on the bar goes to 2.5 bar within 15 minutes of CH being on. In addition to this when I run the hot water in my kitchen I only get about half a bowl of hot water and that is about it. Yet if I run the bath or even sink (both of which are upstairs) I get a constant flow of hot water although I do have to turn down the taps so the water flow is slow. Also the kitchen water albeit only about half a bowl is hand hot and then on rare occasion I will get very hot water. The next day i have to again top up the boler as it has lost prerssure. There are no water leaks within the house at all or any leaks from the boiler. It is a good boiler and this one has served us well. So any helpful suggestions would be appreciated as replacing the boiler is not an option at this stage and to tell me if I can do the work myself as a competent DIYer - Thanks all for reading and I look forward to your reply.
