Help - converting vs. knocking down summerhouse

Hoping for some guidance. I want to turn the current summerhouse into something that is usable all year round, and also make better use of some of the wasted space.

Option 1 is to knock the whole thing down and get a large garden room built (or rather a large structure with two rooms (gym and home office) + storage.

Option 2 (and this where I need some help!) - is there a way to somehow use some of what is already built and just amend/extend? Hoping that this may be a cheaper way of doing it.

It looks nice in a well kept garden. You could insulate roof and dwarf walls and that would be expensive but still less than a new build. Far more flexibility if you go for something new, designed or off the shelf but will be expensive
 
Given its size and proximity to the boundary, I would not demolish it as you may find you need planning to replace it.

The walls and floor an be insulated with PIR and boarded.

I'm happy to go down the planning route if needed - but obviously sounds easier to just board the walls and floor!
