hot water tap

Hi
I have just had a combi boiler installed instead of a system boiler. I have noticed that when I open the hot water tap the pressure is much higher than the system boiler, but the hot water pressure goes down in few seconds till the water flow actually stops. I open the hot tap more and the flow starts but again the pressure reduces, after I increase the hot water more the hot water pressure then stay!
Any idea why this happens?
Also any idea how to stop the flutuation in water temperature through a mixer?
