How should I fill in an old pond to convert it to a seating area?

I have an old brick circular pond set into the lawn which i intend to turn into a sunken patio/seating area. It’s 3 metres across, and depth ranges from about 30-150cm as it’s built on a slope. I’ve smashed out the bottom and cut away the old liner already.

I’d like to turn this into a sunken seating area, something similar to the attached pictures. I’d keep the outer wall as seating, then lay small pavers in the middle.

My question is, what do I fill it up with?

I had intended to fill it up with compacted MOT type 1, put down sand then lay the pavers, however I’ve just read that MOT1 shouldn’t be considered permeable so I’m concerned water is going to pool in there. Is MOT type3 the way to go?

Also do I have to use MOT type 1 or alternative for the entire depth, or am I better using earth, gravel, something else then laying the sub-base for just last 6 inches or so.

I have a load of old rubble from another project (bricks, old paving slabs, aerated and concrete blocks) which I’d considered smashing up and filling the pond with, however from what I’ve read I’m doubting thats the best option here.
