How think should ply be to support kitchen units?

Hello,

I'm going to use a combination of batterns, plywood and plasterboard to level my kitchen wall in preparation for new units. It currently steps out in the middle by approximately 57mm (remnents of an old cooker chimney).

I plan to use:

37(ish)mm batterns + 20mm plywood + 12.5mm plasterboard.

I'll dot n dab the 12.5mm plasterboard to the bare bricks on the chimney to try and equalise the wall sections.

Will this setup be sufficient enough to support the new kitchen wall units? Or will I need thicker ply? Do I need wbp ply seeing as though it's the kitchen?

Ok mabe I'm being a little too cautious, how about 15mm, would that be ok?
Need to pin down a range in case I have trouble finding a particular thickness.
