How to replace kitchen fan? (pics included)

HI guys! How would you replace this manky old thing? Does a modern kitchen *need* an extractor fan? How would we replace the big old hole in the wall if we took it out? And if we got a newer one, how to make sure it will fit in that hole??

All kitchens will require a fan/ventilation.
Questions to be asked are.
Does the cooker/hob have extraction?
Do you have any gas appliance in the room that in total exceed 7kW input?
If you do have gas appliances are they open flue or room sealed?

As far as replacement there are many differing types of wall extraction fans on the market. Some are much more aesthetically pleasing than the one pictured.

When choosing a fan you ideally want calculate the room size, to determine the ideal fan type/size required that suits the location.
 
It looks like an elderly Xpelair GC fan or similar......modern replacements are still available.
You certainly need extraction for your kitchen......if it's not possible to use a traditional cooker hood, I'd update what you already have, personally.

Thanks both. We have an extractor fan above the hob, but it doesnt go outside if you know what I mean, just uses the filters. There is a combi boiler in the kitchen, but it has a flue to outside. No idea about the kW input?!

Obviously if you have combusting appliances which draw their air from inside the room, it's not a good idea to over extract.
Is there any possibility of you ducting your existing cooker hood to the outside?
