Does one leave well alone when encountering bonding across the boiler and/or sink cu. pipes?

As far as I recollect, there is no requirement to bond a sink. On this basis, if a bonded one was un-bonded, then the most likely thing to happen would be.....nothing.

Now, I would make a reservation about what else is bonded, or perhaps more to the point not bonded. Some bonding IS considered necessary. If this is not in place, then bonding on the sink might be serving in its place.

It is considered necessary to bond metalwork entering the building. Possibly the sink has a metal waste, or cold water main enters just there?
