Insulating Garage Ceiling, Ventilation?

I believe I asked a similar question a while ago but I've somewhat changed my plans to a less permanent solution and just have a couple of slight worries about ventilation and heat retention if anyone is able to advise please.

I'm not planning to change use of my garage as I currently have it set up as a home brewery. I just want to be able to use it in colder months for a few hours at a time to play a few board games or have a jam without freezing. I plan to install a wall mounted ceramic heater for these occasions.

I believe I have solid plans in place now for the floor and the outer single skin wall that is attached to the neighbours garage. It's the ceiling and garage door opening I have a couple of questions on.

I don't currently have any condensation issues as the garage door is quite draughty, and I'm OK with that for the most part, I don't plan on permanently blocking the door up as I need it wide open when I brew. But, in the interest of creating a temporary enclosed space for a few hours at a time I was wondering if I could just push insulation between the joists right up to the cold roof and be ok condensation wise if there's no air gaps above the insulation? Especially as most of the year I will be keeping the garage as is with plenty of ventilation.

For the door I've found one of these weatherproof insulated garage door curtains, I believe they're normally used on the outside but I figured I could create a frame on the inside of the door (that doesn't get in the way of the door opening) and use velcro strips to keep the curtain in place while using the 'room' and being able to roll it out the way when brewing. The space is slightly less than 3x3m, does this sound like a viable plan, if protected well enough from the elements, to not use too much energy in heating the space up?

What are you planning on putting under the insulation, between it and the room?

Most insulating materials, e.g. rockwool or celotex are hazardous so shouldn't be exposed to the living space, temporary or not. You or your guests don't want to breathe the dust from either.

Just something rigid like Jablite, then board over, although I intend to leave the joists exposed and insulate + board in between them, don't know if that will create cold problems? Probably use OSB for the typical minimum effort 'craft' beer bar aesthetic of chipboard, stainless steel and exposed pipes, cables etc.
