Insulating under flat roof

Hi, I have converted part of garage into downstairs cloakroom. Need advice on insulating before putting plasterboard ceiling on. I have levelled out the sloping joists with thin strips of wood but do not know what type/thickness of insulation to use. The joists are 5 inch. Advice please

My converted room is a kitchen with concrete flat roof, wondering if need vent or something to remove/prevent moisture?

What did you describe in the proposal you sent to your BCO before starting work? Find out, then do that.
