I have a nice new cabinet to go under the basin in the bathroom. It's made of reclaimed pine with a new oak top and looks very pale and bleached. This is just the way we want it as we live by the sea and are going for that beach house look. The problem is that I can't find a way of protecting it from water without losing its dried-out appearance. All products designed to protect wood seem also to 'enhance' or 'revive the natural beauty' of the wood. Any suggestions would be most welcome. I've tried (on the back) tung oil, water-based clear varnish and wax.

Have you tried a product called Aquacoat SP Matt? Although you've already tried waterbased I would recommend this one.
To achieve the desired finish thin it with water to about 20-30%. this will give you a very thin protective coat that will not change the colour of the timber.
I'd only recommend 1-2 coats but you will see for yourself once you apply it - don't be scared to thin the product down even further (50%) that way reducing the solids and film weight.
